Coriander Mint Chutney is commonly known as Green Chutney or Hari Chutney. This chutney has a widespread use with the Indian chaats, pakoras, sandwiches, frankies etc. It is a healthy chutney with a vibrant colour and helps in digestion. Infact Indian chaats and pakoras are incomplete without this chutney. The proportions of mint and coriander leaves used gives the flavour to the chutney. Some people omit the use garlic in this chutney. But whatever!!..this Hari chutney is a must to enjoy the chatkaraas of Indian savoury platters.
Ingredients:
- 100 gram coriander leaves (2 bunches)
- 50 grams mint leaves(1/2 bunch)
- 30 grams garlic
- 10 grams ginger
- 3-4 green chillies
- Juice of 3-4 limes
- 1 teaspoon salt
- 1 teaspoon coriander powder or 1/2 tablespoon whole coriander seeds
- 1/2 tablespoon cumin seeds
- 1/2 - 3/4 cup water
Method:
- Wash and coarsely chop coriander and mint leaves, garlic, ginger, onion and chillies.
- Place leaves, ginger, garlic, onion and all the other ingredients in the jar of a blender along with half cup water and lime juice.
- Blend till a fine taste is obtained.
- Store in the fridge in a dry and clean plastic or glass container
Tips:
- To increase shelf life of chutney, store the chutney in the fridge in a clean and dry plastic or glass container.
- Whenever you want to consume , take out small portions from the fridge.
