Hariyali Murgh Masala (Chicken in Green Gravy)  is packed with   refreshing mint and coriander.It is light on the stomach and preferred during summer because of the cooling nature of mint and curd used. This recipe is quite simple as not much browning is required. The taste of the mint itself upholds the Hariyali Murgh Masala  gravy.This recipe has various versions - with spinach gravy, with only coriander leaves paste or with only mint leaves. Giving sufficient time for marination ensures a nice flavour to this dish. 

Ingredients:

FOR MARINATION:
  • 500 grams chicken
  • 1/2 cup mint leaves
  • 1/4 cup coriander leaves
  • 3 green chillis
  • 1/2 cup yoghurt
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 teaspoon coriander powder
  • 1 tespoon red chilli powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon salt (adjust to taste)
  • 1/2 teaspoon cumin powder
  • 1/4 teaspoon garmam masala powder
  • 1/4 cup chopped onion
FOR GRAVY:
  • Two finely sliced omions
  • 1 teaspoon ginger paste
  • 1 teaspoon garlic paste
  • 1 green chilli chopped(optional)
  • 1/2" cinnamon stick
  • 1 black cardamom
  • 2-3 tablespoons oil
  • 2 medium tomatoes chopped or pureed
  • 1 teaspoon coriander powder
  • 1/2 red chilli powder
  • 1/2 teaspoon turmeric powder
  • 1 teaspoon salt (adjust to taste)
  • 1/4 teaspoon garam masala powder


Method:

  1. Clean chicken and make gashes or cuts on the pieces for the marinade to penetrate through.
  2. Blend all ingredients mentioned under marination.


  3. Marinate the chicken with this marinade and keep aside for at least two hours.
  4. Heat oil in a heavy bottom pan,
  5. Add the whole spices and let them crackle.
  6. Now add the sliced onions and saute till light brown.

  7. To this add the ginger garlic paste and chilli. 
  8. After sometime add the tomatoes and saute for a while.
  9. Add the spices now and saute for a few seconds.
     
  10. Add the chicken along with marinade .
  11. Cover and cook on medium flame for 15 minutes.
     
  12. Then reduce flame to low, sprinkle garam masala powder  and cook for 20 to 25 minutes. 
  13. Serve hot with rice, roti or naan and enjoy.

Tips:

You can add a teaspoon of cashew powder so that the gravy thickens
