Vegetable  Stuffed Homemade Buns

It is a bliss to have home baked  stuffed buns.The aroma of fresh baked buns is exhilarating.These vegetable stuffed buns are an all time favourite of not only children but also grown ups. The key to good baking is to  just follow proper weight measurement. You can vary the stuffing according to your liking. Stuffed buns are bound to impress the guests.

Ingredients:

FOR BUNS DOUGH:

  • 250 gm  all purpose flour OR 125 gm all purpose flour plus 125 gm wholewheat flour
  • 2 tsp (8gm) instant yeast
  • 1 teaspoon salt
  • 4 teaspoon butter OR olive oil
  • 1.5 tablespoon milk powder
  • 1 tablespoon sugar
  • 190ml milk
  • Butter and milk for brushing
  • oil for greasing

FOR VEGETABLE STUFFING:

  • 1 medium chopped potato
  • 1/2 cup finely chopped beans
  • 1/2 finely chopped carrots
  • 1/4 cup green peas
  • 1/4 cup chopped capsicum
  • 1/2 cup finely chopped onions
  • 1 teaspoon ginger garlic paste
  • 2-3 teaspoons pav bhaji masala powder
  • 2- 3 teaspoons oil
  • salt to taste



Method:

FOR BUNS DOUGH:

  1. Organize all the ingredients.
  2. Lightly mix  sugar and yeast with lukewarm water . Cover and set aside for 10-15 minutes till frothy.

  3.  In a large mixing bowl, combine all purpose flour, milk powder, salt, oil or butter.
  4.  Add the frothy yeast mixture and knead into a dough. You may  add a little more milk or flour as needed. 

  5. Once the dough is mixed remove it form dough hook and knead gently with your hands. This enables gluten formation. 
  6. Apply some oil on the dough so that it doesn't dry.
  7. Turn the dough into a well greased bowl
  8. Cover with a plastic wrap and set aside for 1 or 2 hours. The dough will double in volume by then.


FOR VEGETABLE STUFFING

  1. Boil the potatoes, beans. carrots and peas in just enough water. Then mash the boiled vegetables. 
  2. Heat oil in a pan.
  3. Saute the onions for sometime
  4. Add ginger garlic paste  and saute for a minute, Then add chopped  capsicum and saute for a few seconds
  5. Now add the pav bhaji masala powder and salt.Saute further for a few seconds
  6. Now add the boiled and mashed vegetables and combine well on low flame. 
  7. Switch off the flame . Cover the vegetable stuffing  and keep aside

HOW TO PROCEED

  1. The dough will have doubled in volume by now. Knock the dough lightly to expel any air pocket
  2. Divide the dough into equal portions .
  3. Roll out each ball of dough.
  4. Place a teaspoon of the vegetable stuffing.
  5. Bring together the edges of the dough and pinch it to seal. Make a nice neat ball. Do the same for all the buns.
  6. Line up a baking tray with parchment paper and grease it
  7. Place the buns keeping enough space between them with seam side down  . Cover and let them rest for half an hour
  8. In the meantime, preheat oven to 220 degrees Celsius.
  9. Brush the top of each bun with milk and sprinkle sesame seeds.
  10. Once the buns have rested, place the baking tray in the preheated oven.
  11. Bake for 20-25 minutes till done.
  12. Cool on a wire mesh. Brush  with some  butter.
  13. Eat them fresh . The remaining buns stay good for a day or two in the refrigerator. 

Tips:

Store any leftover buns in the fridge.  Warm the stuffed buns before consuming the next day.
You may use a stuffing of your choice.
