Tandoori Chicken Drumsticks is a favourite dish of all age groups. Some like it spicy or some prefer mildly spices. The taste that emanates from this exquisite Tandoori Chicken Drumsticks dish  is the outcome of what goes in making its yoghurt based marinade. You can play around with its spices to suit your palate. Nowadays tandoori spice powder  and tandoori colour is readily available. Yet many people find gratification in making their own spice mix to marinade the chicken. Basting at regular intervals renders a juicy succulent chicken.

Ingredients:

  • 10-12 chicken drumsticks with skin removed
  • 1/2 cup hung yoghurt or Greek yoghurt
  • 8-10 cloves garlic paste
  • 1/2" ginger paste
  • Juice of 1 lemon 
  • 1/2 teaspoon lemon zest
  • salt to taste
  • 1 teaspoon coriander (dhania) powder
  • 1 teaspoon cumin (jeera) powder
  • 1/2 teaspoon red chilli powder
  • 1/2 teaspoon garam masala
  • 1/2 teaspoon fennel powder
  • 1 teaspoon kasuri methi crushed
  • a pinch of tandoori food colouring
  • 1 tablespooon olive oil plus more for basting

    Method:

    1. Clean and pat dry  the chicken drumsticks. Make  gashes on them
    2. First Marinade: Rub the chicken drumsticks with  salt, chilli powder and  lemon juice . Keep aside for 10-15 minutes
    3. Second Marinade: Make a marinade by blending ginger, garlic, lemon juice, coriander powder, cumin powder, red chilli powder, fennel powder , yoghurt and a little  salt. 
    4. Add  tandoori  colour, crushed kasuri methi leaves and lemon zest to this marinade. 
    5. Marinate the chicken with this second marinade. Leave aside for 3-4 hours at least or more
    6. Preheat the oven to 200 degrees Celsius.
    7. Add the oil into the marinade and mix well.
    8.  Grease a roasting/baking tray and place the chicken drumsticks  uniformly throughout the tray and place into the preheated oven. 
    9. Roast/ bake for 40-45 minutes. In the meanwhile turn over the drumsticks after half an hour and baste them.
    10. When the drumsticks are nearly done, broil them in order to obtain the charred marks
    11. Serve the drumsticks hot with naan or bread and mint coriander chutney


    Tips:

    For juicy drumsticks , when  roasting is over, turnover the chicken drumsticks and let the masalas be absorbed by the drumsticks before serving.
