These Pina Colada Cookies are so easy to make within minutes. Pina Colada Cookies..! Yes you heard it right!.. They are crisp and flavourful. No alcohol no eggs! Yet the desiccated coconut and pineapple essence make them so flavourful. Pina colada drink happens to be my favourite and this propels the story behind making super easy Pina Colada Cookies.
You could add some dried pineapple pieces into the cookie dough. But as I said these are really easy cookies made with minimal ingredients. Just mix, roll out and bake!

Ingredients:
- 100 gm all purpose flour (maida)
- 50 gm powdered sugar
- 25 gm dessicated coconut
- 1/8 tsp baking soda
- 1/4 tsp baking powder
- 1/2 tsp pineapple essence
- 60 gm butter
Method:
- Get organized.
- In a bowl place butter at room temperature.
- To this add powdered sugar.
- Beat butter and powdered sugar well till light and creamy.
- To this add dessicated coconut,......
- then add baking powder and baking soda...
- Now add pineapple essence.
- Mix well.
- Lastly add milk as needed to form a soft dough.
- Roll the dough evenly and cut cookies in desired shapes with a cookie cutter
- Arrange on a baking tray that is lined up with parchment paper.
- Keep enough gaps between the cookies
- Bake in a preheated oven at 160 degrees Celsius for 15 minutes.
- Cool the cookies on a rack. Store in air tight jars.
Recipe Notes:
- Do not overmix the cookie mixture/dough.
