Spinach Corn Paneer Sandwich is a healthy snack option for children as well as adults.This snack is a powerhouse since spinach contains minerals, paneer provides protein and minerals such as calcium and phosphorus and corn is rich in antioxidants and the wholewheat bread provides the dietary fibre-thus fulfilling the requirements of growing children. Spinach Corn Paneer Sandwich does not require much time. It can be toasted or grilled or can be eaten just like that.

Ingredients:

  • Spinach 2 bunches washed and chopped finely
  • 1/2 cup Corn kernels blanched 
  • 100 grams shredded  Paneer 
  • 2 cloves Garlic chopped finely
  • 1 small Green chilli finely chopped 
  • 1 tablespoon oil  
  • Salt to taste 
  • 1 to 2 teaspoon Lemon juice  
  • 1/4 cup Carrot  finely chopped 
  • 8 wholewheat or multigrain bread slices
  • Around 25 gram butter or as needed 

    Method:

    1. Heat oil in a pan and saute garlic.
    2. To the sauted garlic add spinach and saute for a minute
    3. Then add the chopped carrot, shredded paneer, corn kernels, chilli and salt. 
    4. Saute nicely till water evaporates.
    5. Once all water has dried, add the lime juice. 
    6. Put off flame.
    7. Spread butter on one side of each slice.
    8. Place stuffing on the buttered side of 4 slices
    9. Place the buttered side of the other slices on the stuffing.
    10. Thus there will be 4 sandwiches now.
    11. Lightly grill or toast the sandwiches.This is an optional step.
    12. Cut each sandwich into 4 triangles. 
    13. Serve with chutney or ketchup.
