This Marinara Sauce recipe can be used for making pasta and on Pizza. It is a simple tomato puree with a few basic ingredients such as onions, garlic and herbs such as thyme or oregano.This Marinara sauce is very easy to make - blanching the tomatoes and simmering them with basic ingredients; that's all!! This sauce can be made chunky or smooth. I prefer to make a puree of the tomatoes and the texture to the sauce comes from the onions, capsicums and garlic that are sauteed into it . Once prepared it stays good in the refrigerator for 2-3 days; longer in the freezer. Nice ripe and red tomatoes are recommended for the marinara sauce.

I have been making this sauce long before I knew that it was a Marinara Sauce. Ingredients:
- 500 gram whole ripe and red tomatoes.I prefer to peel them before blanching
- 6-7 large cloves garlic, peeled and roughly chopped
- 1 small onion sliced
- 1/4 cup diced green capsicum
- 2 tablespoons extra-virgin olive oil
- 1 teaspoon dried oregano
- a pinch of red pepper flakes
- a pinch of black pepper powder
- 1 teaspoon of sugar or as needed
- Salt to taste
Method:
- In a medium, heavy-bottomed saucepan blanch the tomatoes and make a puree.
- In another pan , warm the extra virgin olive oil over medium heat. Add onions and garlic and stir fry for a few minutes till fragrant.
- Add the chopped capsicum and saute.
- Then add the oregano.
- Pour in the puree tomatoes, chili flakes, black pepper, sugar and salt. Bring the sauce to a simmer over medium-high heat stirring occasionally
- Then lower the heat and simmer for about 20 minutes, or until you see droplets of oil floating on the top
- Toss the pasta with this red luscious marinara sauce. This sauce keeps well, covered and refrigerated, for up to 3-4 days.You can even spread on the pizza base before putting cheese and other toppings on it.
Tips:
- Use good quality tomatoes.
- Only lightly saute the garlic.We want the aroma of garlic and not the bitterness of burnt garlic
