Pasta Corn Salad
Pasta Corn salad is a cold salad recipe perfect to beat the heat. It is an easy to make, colourful and crunchy salad. This salad is often repeated when planning my party menu.
Ingredients:
- 1/2 cup small macaroni boiled al dente
- 1/2 teaspoon oregano
- 1/2 teaspoon finely chopped garlic
- 1/2 cup boiled corn kernels
- 1/4 cup chopped green capsicum
- 1/4 cup chopped red capsicum
- 1/4 cup chopped finely chopped carrot
- 1/8 cup chopped scallions
- 1 teaspoon of apple cider vinegar OR white vinegar
- 1/2 teaspoon chaat masala OR cheese onion powder
- 1/4 teaspoon crushed black pepper
- juice of 1 lime or as needed
- 2 teaspoon extra virgin olive oil
Method:
- Heat a teaspoon of olive oil and saute chopped garlic .
- Add oregano to the garlic and saute for a few seconds.
- Finally add the pasta and further saute for a few seconds. Put off the flame. Set aside to cool
- Take the sauteed and cooled macaroni in s a tossing bowl.
- To the macaroni add all the remaining ingredients - corn, capsicum, carrot, scallion, vinegar, lime juice,salt, chaat masala, crushed black pepper and olive oil.
- Toss nicely.
- Check for seasoning and adjust
- Enjoy mouthfuls of salad.;)
- Taste matures when prepared a few hours ahead.
Tips:
- Always remember to toss just before serving.
- Any kind of small to medium size pasta can be used .
