This Vegan Pasta in Soya granules sauce is a healthy and highly recommended   option for vegan and vegetarian  lovers. It is light and a very proteinaceous recipe. The sauce consists of soya granules cooked with onions and tomatoes to give a luscious thick sauce/ gravy. Vegetables such as capsicums, carrots and peas can be added to give a further kick to the  nutrients content.
The venture into this recipe started as my son was growing. I wanted him to enjoy eating his food rather than just forcibly gulping down to empty off his plate.
Then this thought struck me - Why not try!! ... Since then there has been no looking back.

Ingredients:

FOR SOYA GRANULES SAUCE/GRAVY:
  • 1/2 cup soya granules
  • 1 large onion finely chopped
  • 1 medium tomato finely chopped
  • 1 green chilli finely chopped
  • 1 tablespoon ginger garlic paste
  • 1 teaspoon salt
  • 1/4 teaspoon turmeric powder
  • 1 teaspoon coriander powder
  • 1/4 teaspoon red chilli powder
  • 1/4 teaspoon garam masala powder
  • 1 cup water or as required 
  • 1/4 cup oil for cooking
FOR PASTA
  • 1/2 cup Fusilli (Spiral) pasta boiled in salt water
  • 2 teaspoon olive oil
  • 1 teaspoon finely chopped garlic
  • 1/8 cup carrot juliennes
  • 1/8 cup capsicum juliennes assorted colours
  • 1/4 teaspoon oregano powder
  • 1/4 teaspoon Italian herbs mix

    Method:

    FOR SOYA GRANULES GRAVY/SAUCE: 
    1. Arrange and get organised with your ingredients.
    2. Immerse soya granules in hot water for ten minutes . Rinse and drain under running water. squeeze out water and keep aside


    3. Heat oil in a pan or pressure cooker and saute chopped onions  till light brown.
    4. Add the ginger garlic paste and chillies and saute for a minute
    5. Now add the soya granules and saute for a minute

    6. Then tip in the salt, turmeric powder, coriander powder and chilli powder and saute for 5-7 minutes. Then add the chopped tomatoes. 

    7. Add water and finally sprinkle garam masala powder.

    8. Cover pan and cook for 20 minutes in a pan or cook for 3 whistles in a pressure cooker.

    FOR PASTA:
    1. Heat olive oil in a wide pan and lightly saute the finely chopped garlic

    2. Now add the capsicum and carrot juliennes , oregano powder and Italian herb mix
    3. Finally add the pasta  and toss gently.
    HOW TO PROCEED:
    1. Spoon out a generous quantity of soya garnules sauce over a bed of pasta. 
    2. Sprinkle some scallions over the pasta
    3. Enjoy it warm.


      Tips:

      1. Boil the pasta till just done.
      2. A bit of tomato sauce can also be added to the soya granules sauce
      3. Alternatively you may add vegetable stock cubes to the soya granules sauce instead of the dry spices.
