Quinoa Stir Fry with Veggies
Quinoa Stir Fry with Veggies has been another hit item in my spree to cooking healthy quinoa recipes. The other day as I was making a Quinoa dish, I nibbled on wee bit of quinoa mixed with vegetables. Believe me.... it gave me a culinary enlightenment. So the following day I was on my feet again. I wish I had some leftover cooked Quinoa. It would have saved me all the trouble. Anyways.. when I decide ...means.. I must do, no matter what the odds....It is a self propelled instruction solely for me. So the following day the first thing I did was to rinse and soak quinoa to give enough time to swell. Hurriedly I wound up the other chores so that I could have the time for making this recipe. At last .. I moved on with the recipe of the day..... Quinoa Stir Fry with Vegetables.
Before this dedicated venture of mine. I have prepared a quinoa salad some time back. It was fine but couldn't go beyond that.The matter stopped there. We also have quinoa salads in restaurants. But somehow my husband and son do not seem very keen.
But this time, the Quinoa recipes such as Quinoa stir fried with Vegetables, have brought a renaissance in my culinary world. Now I feel that I can include Quinoa in my family and party menus. Yepee.......!!
Nutritionally, Quinoa has a very high-protein content. This makes it a great cholesterol-free and low-fat source of protein for vegans and vegetarians. It is also a good source of iron and magnesium. Above all, it is a gluten-free food.

Ingredients:
- 1/2 cup quinoa soaked for 2-3 hours
- 1/2 cup finely chopped onions
- 2 cloves of chopped garlic
- 1/2 cup green capsicum (can use asstd colours too)
- 1/2 cup canned corn kernels
- 1/2 cup finely chopped carrots
- 1/4 cup coarsely chopped roasted pine nuts
- 2 green chillies finely chopped
- 1 teaspoon coriander powder
- 1/4 teaspoon turmeric powder
- 1/4 teaspoon red chilli powder
- 1/4 teaspoon garam masala powder/all spice powder
- salt to taste
- a few sprigs of chopped coriander
- 2-3 teaspoon cooking oil
Method:
- Cook the soaked quinoa with a pinch of salt in just enough water till it is soft and fluffy. Set aside.
- In another pan heat two teaspoons of oil .
- Add the garlic to the oil and saute it till garlic turns light pink.
- Now add in the chopped onions and saute for a minute till onions sweat.
- Then add the vegetables - carrots, capsicums, green chillies and corn .
- Stir gently and continue to stir fry for 2-3 minutes
- Then add the salt and other dry spices.
- Gently stir and saute for two minutes .
- Now add the boiled quinoa into the vegetables and stir gently till nicely combined.
- Stir fry for two minutes more.
- Garnish with coriander. Now you are ready with your healthy Quinoa Stir Fry with Vegetables :)

Tips:
- Rinse Quinoa and soak well so that the seeds swell.
- You may use vegetables or cooked meats of your choice
